On page three of our PDF report we show your emissions of the month broken down into various categories, such as "plant" or "animal" based ingredients. For each category, we display its weight (in kg), its total CO₂ emissions (in kg), and a comparison to all restaurants that we are measuring.

This comparison is made by averaging the CO₂ values of the respective category over all restaurants. Of course, we ensure that each restaurant is normalized to the same size (i.e. number of guests) as your unit. This is done using the Daily Food Unit - DFU [EN/DE].

As an example: a climate friendly restaurant that serves meat, might choose to purchase more chicken than beef. This means that it will have relatively higher emissions in the "chicken" category. In the example below, this restaurant happens to have bought more tea-leaves than the average restaurant that it is compared to. However, given that the total emissions from tea-leaves is low, this is not something to worry about.
